This took me bloody forever. I’m also assuming you can knock off random letters as oppesed to only from the end of the word, because otherwise it doesn’t work. Through itterative elimination, the best I could do was ‘Antics’ which is only six letters, there are no eight letter words (in English that I know of) that can still be a word when you knock off a letter from the end every time. However, I got this when I started knocking random letters off.

Gestated > Gestate > Estate > State > Stat > Sat > At > A

There’s probably more, but this is the one that I got.
